"Whatever You've Got" Frittata
Ingredients
8 eggs
1/2 cup milk
1/2 cup grated aged cheddar
1 tablespoon chopped fresh herbs (parsley, basil, chives)
1 tablespoon olive oil
salt & pepper
1-2 cups of ANY leftover vegetables, protein, potatoes or grains you have kicking around in the fridge
(I used mushrooms, bacon and quinoa in the one pictured below.)
Directions
I'm the self-proclaimed queen of frittatas - it's an easy way to create a quick meal and/or use up leftovers and it's a lot less work than making a quiche! It's high in protein and can be eaten for breakfast, lunch or dinner. Get it in your meal roster if you like quick and delicious meals. Great with a side salad or even as a sandwich or wrap filling.
1. Set the oven to broil.
2.In an oven safe frying pan heat your oil on medium-high and then sautée the meat/veg combo of your choice until everything is warmed through (or cooked through if starting with raw ingredients).
2. In a separate bowl whisk the eggs, milk, herbs, salt & pepper and cheese.
3. Spread out the filling evenly across the pan and add the egg mixture, ensuring everything is coated in egg.
4. Let the bottom of the frittata cook for 2 minutes and then transfer the pan to the oven to broil the top. Once it's no longer jiggly and slightly golden (about 5 minutes), remove from the oven and slide onto a cutting board for serving. The possibilities are endless!
