Chicken Souvlaki
Ingredients
4 chicken breasts (serves 4 people)
1 tablespoon olive oil
6 cloves garlic minced
Zest of 1 lemon
1 tablespoon dried oregano
1 teaspoon sweet paprika
1/4 cup dry white wine
Salt & pepper
Tzatziki
1 cup shredded strained cucumber
1 clove garlic minced
2 cups greek yoghurt
1 tablespoon olive oil
1 teaspoon dried oregano
Zest and juice 1/2 lemon
2 teaspoons apple cider vinegar
Salt & pepper to taste
2 teaspoons of chopped mint and/or dill optional
Directions
1. Chop the chicken into 1.5 inch pieces and mix with olive oil, garlic, lemon zest, oregano, paprika, white wine, salt and pepper and marinate for at least an hour. Soak wooden skewers in water while the chicken marinates.
2. Mix the strained cucumber (squeeze out as much water as you can (adding salt helps) with the garlic, greek yoghurt, olive oil, oregano, zest and lemon juice, vinegar, and any fresh herbs you want to add. I sometimes add a pinch of sumac. Season with salt & pepper. Set aside.
3. Skewer the chicken onto the wooden sticks or metal skewers if you have them and grill on the bbq until cooked through with crispy edges making sure to rotate them and brush them with remaining marinade.
4. Serve with pita bread, cucumbers, tomatoes, onions and tzatziki.
